Today this is another of my own recipe and it’s worth tasting atleast once.
Here is a super delicious dish for you for weekend, simple to make and tasty to eat.
Recipe for One Here—
Ingredients: 2 Potatoes, 2 eggs, clarified butter/cooking oil, curry leaves – these are purely optional, salt, red chili flakes, black pepper. That’s It!
Step 1. Take 2 potatoes and wash them with water.

Step 2. Cut them in two parts, put water in pressure cooker and give 2 whistles to the cooker.

Step 3. Once the gas comes out of cooker, open cooker and take potatoes out, peel them off.

Step 4. Mash it up with hands, you can wait for potatoes to cool down. Add half tea spoon of salt and red chilli flakes to taste and mash it more with hands.

Step 5. Mash and mix it well, keep it in a plate at side.

Step 6. Take some curry leaves and wash them, if you don’t have curry leaves ignore this step.

Step 7. Take one serving spoon of cooking oil in a frying pan.

Step 8. Let oil heat, add one teaspoon of black pepper for simmering in the frying pan.

Step 9. Add around 8-10 curry leaves in the frying pan now. This step is purely optional.

Step 10. Don’t overheat, quickly add the potatoes paste made above in the frying pan now.

Step 11. Mix contents of the frying pan well with a spatula.

Step 12. Heat well, mix well.

Step 13. Take it out in a plate.

Step 14. Look how nice it looks.

Step 15. Take two eggs now in a bowl.

Step 16. Add two pinch of salt in the bowl and beat it well.

Step 17. On the same frying pan add a spoon of clarified butter or cooking oil of your choice for making omelette.

Step 18. Spread it well on pan, let it heat and pour in the beaten eggs on frying pan now, spread the egg on pan to sides.

Step 19. Flip the side with help of another plate.

Step 20. Once cooked as per your liking take it out on plate. Know I like fully cooked omelette you can take it out half cooked as well.

Step 21. Now add the potatoes mixture we made above in middle of omelette.

Step 22. Arrange the potatoes mixture made above well. And do it quickly as we need to serve it hot.

Step 23. Now roll the omelette from one side to another.

Step 24. Cut it in two parts now.

It’s ready to be served. Have it hot! It’s a must try and it’s simply delicious!
