Potato Veggie Mashup : Really Veggie Really Yum, veggie and complete meal.

I share with you all a mouth watering yum yum veggie delight, you may add flavored in it but I liked it bland as it does not have spices with natural flavours of veggies mixed with garlic and olive oil.

I personally prefer vegetables to fruits, vegetables are locally available and nice to have in complete meal, especially when combined with potatoes.

Here is a recipe for you.

Ingredients: 3 potatoes, 1 onion, 4 garlic cloves, 3 spoon smoked mustard oil, 4 spoon of virgin olive oil, cauliflower, 1 carrot, cabbage, green leaves from garden if available (spinach, kale, beetroot).

Steps are as follows:

Step 1. Take three potatoes I used the ones available in Australia.

Step 2. Wash and peel off the potatoes.

Step 3. Heat frying pan and add 3 spoon of smoked mustard oil or any other frying cooking oil to fry the potatoes well before virgin oil can be added at the end of cooking.

Step 4. Cut the potatoes into decent size as shown below.

Step 5. Add the potatoes to frying pan now depending on what oil you have chosen, would it require heating oil or now, I used smoked mustard oil hence does not require oil to be heated fully.

Potato’s are added first so that it starts to cook potatoes as we cut the other vegetables which not require extensive cooking as much as is needed for potatoes to be cooked.

Step 6. Now in the meantime start cutting veggies, here is one onion, cut full onion in small parts now.

Step 7. Add this cut onion in frying pan now. Keep heat of frying pan low and on and off keep mixing the frying pan on and off.

Step 8. Mix well now at low temperature add 4 finely chopped garlic cloves in frying pan now. This step is optional depending on if you like taste of garlic I love it, what about you? Keep mixing it the frying pan on slow heat so that potatoes don’t stick to the pan.

Step 9. Cut one orange carrot now.

Step 10. Take some fresh leaves from your kitchen garden if available to you. I took spinach leaves, silver beat and kale leaves fresh from garden. Please see where you can find these or use what you can easily get from nearby farmers.

Step 11. Dip these leaves in fresh water now. Make sure they are well washed before dipping in water, to free them from all mud and soil insects, you may choose to use other ways to clean the leaves from garden.

Step 12. Take fresh Australian cauliflower some four flowers of it may be. See how much flowers of cauliflower you may like. Wash it with water.

Step 13. Cut the cauliflower into small parts as comfortable for you to eat, I used the following size.

Step 14. Add cut cauliflower into frying pan and then grate the cut carrot cut above in a grater as carrot taste best when grated. These are fresh orange carrots bought from Australia.

Add the grated carrot in the frying pan now. Mix well. Add 2 soon of extra virgin olive oil now.

Step 15. After sometime time when greenies are clean take it out of water.

Step 16. Cut the green veggies now.

Step 17. Add these veggies into frying pan now. Keep mixing add extra virgin olive oil now enough to make it taste well, another 2 spoons I added at this intervals. You may choose when to add extra virgin olive oil to frying pan so that it does not stick to frying pan.

Step 18. Mix well the contents of frying pan. If you can’t consume kale partially cooked, boil it to add it else just add the dark greenies vegies you have leave Kale leaves then. Some how I love raw finely cut veggies a lot. Heat increased now as now we don’t have anything to cut now, so we can focus on mixing the contents of frying pan with wooden spatula on high heat. If you have ready cut veggies then you can use high heat once potatoes become soft, no hard and fast rules for this delicious Vegi delight mashup dish.

Step 19. It’s ready in one minute time on high heat now, I like this much cooked in mashed up semi cooked vegetables delight dish. By now potatoes are cooked and yet not mashed and not fully soft but soft enough to be eaten well, cauliflower is crispy by now without being fully cooked or without being fully boiled, no it’s not boiled, it has a natural taste with partially cooked flavor.

Step 20. Take some cauliflower I took light green vegies. To add it to the plate raw as I love raw cauliflower a lot. It adds taste to this hot semi cooked Vegi madup meal with fully cooked potatoes.

Step 21. The content of frying pan looks like this by now.

Step 22. Time to serve it on a plate.

Step 23. Light green cauliflower decorated on the borders of the plate, it adds real flavor to the dish. You may use other cauliflower as well.
