Delicious Green Peas Stew with Vegetable Purée

Here is an innovative recipe where Green Peas is cooked with vegetable purée instead of tomato purée. A version of this dish is famous in northern India when made with tomatoes purée.

This was inspired by the steep rise in tomatoes prizes in monsoon season.

Recipe

Step 1. Take ingredients for vegetables stew. I had these vegetables for stew, one carrot, one capsicum and one tomato.

Step 2. Cut them in small parts.

Step 3. Put 1.5 cup of water and heat it in a pressure cooker on slowest flame. Give two whistles.

Step 4. In the meantime cut one onion. Put this onion in frying pan with 1 spoon of heated oil.

Step 5. Heat it, keep mixing it till it’s cooked to golden color.

Step 6. Close the gas and let it cool down.

Step 7. By now the vapours from cooker have gone. Open it when gas resides out of cooker completely.

Step 8. Take boiled vegetables out into pan in which you cooked onions. Let water in which vegetables were boiled be there in cooker. Let it cool down, as we need to use mixture grinder / mixi to make its paste and one should never use very hot things in mixi or grinder.

Step 9. Add cut potato and handful of green peas in the same cooker on slow heat in same vegetable broth. Give it one whistle.

Step 10. As the green peas are in cooker. In the mean time, add the boiled cut vegetables in frying pan, this includes onion, put it all, carrot, capsicum, tomato in mixture grinder. Grind it, it would become a paste as follows.

Step 11. Heat 3 spoons of oil in frying pan.

Step 12. Once oil is heated means fumes come, add the vegetables paste in frying pan.

Step 13. Mix it well, till this is cooked, means it leaves oil behind and reduces some volume as well.

Step 14. It’s ready, add the contents of pressure cooker in the above frying pan. This means add boiled green peas and boiled potatoes with the same broth water in which all vegetables were boiled, add it in frying pan.

Step 15. Mix it well on slow heat for 5 minutes add salt and red chilled to taste.

Step 16. It’s ready to serve. Have it with breads.
