Can I share with you my today’s recipe – a delicious fully cooked with uncooked tomatoes.

It’s sweet in taste, mildly chilli flavor in between with sourness of four green mangoes, four potatoes, one onion, two tomatoes, three green chilies, one tablespoon of black salt. Increase in this ratio in same ratios for best taste.
Here is a quick summary of the steps of cooking this super super delicious delight, heat the cooking oil four tablespoons, simmer one small cut onion in it, then finely cut four green mangos after peeling them off, heat it on slow flame, keep moving, cover glass lid for a while, keep opening and moving with spatula, for five minutes or until the green mangoes are soft, cut finely three green chillis and add half tablespoons of black salt in it, in the mean time wash, peel and cut four potatoes very roughly in small to medium size. Heat on high flame for five minutes, taste potatoes should be cooked by now, heat more if your heating stove has is different settings. Cut two tomatoes in small parts roughly. Sprinkle the potatoes on top of frying pan and mix. It’s ready do not cook the tomatoes.
How does it look to be served hot, it taste good at room temperature as well. Enjoy it hot as it goes cold in room temperature.

Ingredients: four green mangoes, four potatoes, one onion, two tomatoes, three green chilies, one tablespoon of black salt.
Steps here,
Step 1. Take four green mangoes and peel them off after washing it well.

Step 2. Heat four tablespoons of cooking oil I used mustard oil. Heat till fine vapours rise in it. Close the lid of gas after that.

Step 3. Cut one onion in roughly small parts.

Step 4. Roughly cut the peeled green mangoes in small parts.

Step 4. Heat mustard oil smoked above for a while and add the cut onion in the frying pan.

Step 5. Add the roughly cut peeled green mangoes in the frying pan once the onions turn golden.

Step 6. Mix well, keep moving well. Then cover glass lid on top of it and heat it in slow flame.

Step 7. Open the glass lid on and off to keep moving the spatula in the frying pan. Add roughly cut potatoes in the frying pan and add black salt to taste in the frying pan I added black salt two times, totalling to half tablespoons of black salt.

Step 8. Add two tablespoons of granulated white sugar in the frying pan now.

Step 9. Cut green chilli to roughly small parts.

Step 10. Add green chillis to the frying pan and mix well, heat on high flame, do not add any kind of water in the frying pan. Mix well with spatula in five minutes on high flame my potatoes were ready to eat, as in soft enough for the dish. Check time requirements and temperature adjustments in case of different heating stove, make sure potatoes are soft and not too over soft, not hard, just perfect for the dish, you may taste it for the best soft yet not crispy potatoes which are not mashy soft.

Step 11. Now roughly cut two tomatoes into small parts by equal horizontal and vertical cuts.

Step 12. Add these cut tomatoes into frying pan.

Step 13. Mix well the cut tomatoes and immediately close the gas stove lid. DoNot cook the tomatoes it tastes like this the best raw.

Step 14. Look how good it looks in the close up of the frying pan.

So, time to have it hot, then let it warm and it taste very good even at room temperature of moderate climate. Here is the mouthwatering dish, made by me, inspired by presence of green mangos I bought from vegetable vender few days back.
