Long Chilli Omelette flavoured with Fresh Parsley and Fresh Basil

How are you doing? It was Saturday today, I got a chance to cook. I wanted to make omelette flavoured with fresh green parsley and fresh green basil which I got from a plant swap program here in Ausi. I always wanted to add fresh green parsley and fresh green basil in omelette, but in India we get the dried version easily, fresh ones are expensive to order. So, my long time dream to have fresh parsley and fresh basil came true. Today a version of green parsley and green basil with Ausi long chilli.

Here is the recipe for one.

Ingredients: 1 long chilli, fresh green parsley leaves, fresh green basil leaves, salt, olive oil, butter, 2 eggs, grated cheese that is it.

Steps for this delightful meal below:

1. Take handful of fresh green parsley leaves and fresh green basil leaves.

2. Chop it finely on a chopping board.

3. Take one long chilli, the Ausi version I had was chilli in taste so we need no red chilli and no black pepper in the omelette.

4. Chop the long chilli finely on another chopping board.

5. Take 2 eggs and open them in a bowl.

6. Beat the eggs well with a fork.

7. Mix the chopped long chilli, chopped fresh basil, fresh parsley and beaten eggs well, add salt to taste, I added 2 pinch of salt.

8. Take a frying pan and add one spoon of olive oil and some butter.

9. Mix well butter and olive oil throughly.

9. Add the beaten egg mixture on this frying pan.

10. I flipped the sides as I like fully cooked omelette you may stop here and move to next step. Add grated cheese as per taste by taking omelette out on a microwave safe plate.

11. Fold the omelette and heat it in microwave for 30 seconds.

12. It’s ready, cut this cheesy delight in two parts. I had it with homemade bread.
