Cauliflower Stuffed Flat Bread

Ingredients: (1) Cauliflower, (2) dough with only water and flour, no baking powder, (3) green chilies, salt, (4) clarified butter or normal butter if clarified butter is not available, (5) salt and (6) butter or sauce to taste. That is it!

Here is how it looks when opened, isn’t it hot and tempting?

Here is recipe for one.

Step 1. Take a cauliflower, here is the huge Australian cauliflower. Look at how big it is, in Delhi I never had chance with huge cauliflowers. Amazingly to see this and it tastes great.

Step 2. Cut a small flower part out of this cauliflower and wash it in water.

Step 3. Take a chopping board, remove the stem parts of the cauliflower and cut the cauliflower into small parts.

Note: If you have a really good mixture grinder and you don’t want to cut stems of cauliflower you can try having the stuffed flat bread with cauliflower stems as well.

Step 4. Take a mixture grinder and put this cauliflower into mixture grinder.

Step 5. Close the lid of mixture grinder and mince the cauliflower.

Step 6. Take 3 green chillis now and cut them finely.

Step 7. Put the cut green chilli into the mixing grinder and run it again so that it mixes well with the mixture.

Step 8. Take this mixture out in a bowl.

Step 9. Take a handful of fresh dough on a slab, make a small round ball out of it. The making of dough is simple, take the dry flour, and knead it by adding fresh water to it, till it turns to a uniform dough. No baking powder needed here.

Step 10. Cover this dry flour and press it on the rolling slab.

Step 11. Roll the roller on this dough into a round.

Step 12. When it expands to a considerable circle of size around 4-6 inch, stop rolling. Initially you may not be able to make a perfect round out of dough, it comes with practice, in this case, cut the spread with a rough utensil and remove extra parts.

Step 13. Put in the cauliflower mixture we made above on this spread, add salt to taste on it now. Add as much cauliflower as you need the stuffing to be, for a decent stuffed flat bread add 3 spoon full of the mixture.

Note: The more cauliflower mixture you put in the more its chances of breaking, so the more careful you need to be.

Step 14. Start folding from the ends, as shown in image below.

Step 15. Cover it completely from all sides.

Step 16. Use some dry flour on both sides of this roll and use a roller to expand it.

Step 17. Turn the side, expand from the other side now. Expand it further to size of 4-6 inch or the size of the pan as you like.

Step 18. Take a frying pan, heat it.

Step 19. Put some clarified butter or normal butter whatever is available on pan now.

Step 20. Put this rolled bread on pan now.

Step 21. Flip the side and apply clarifying butter on it.

Step 22. Flip again and apply clarified butter on it and flip side.

Step 23. Flip again.

Step 24. Press it with spatula so that none place remains uncooked.

Step 25. When it’s cooked and ready and both sides looks as this. It’s done. Make sure there are no traces of uncooked dough. Take it out on a plate. Make other stuffed bread in same way.

Step 26. Cut it in four parts. And time to serve. You can have it with a butter melting on these hot delight or you can have it with sauce of your choice.
